Chocolate Tasting with Laurent Gerbaud, Brussels

A lovely afternoon in Brussels spent with new-generation chocolatier Laurent Gerbaud, learning all about the science of chocolate and the elements of taste. Gerbaud uses very little sugar in his chocolates (a result of “losing his sweet tooth” during travels to China), and plays up the flavors using fruits, nuts, and spices.
